Tonight I will be on BBC2 ‘How to beat tough times’ at 8pm. I was on Radio 4’s The Food Programme this weekend with Tim Hayward. Here you can ‘Listen Again’. He was exploring the links between a 1930s supperclub in Hampstead, at the Isokon building (built in the constructivist style) with Agatha Christie and other leading lights, with supperclubs in today’s London. The Isobar supperclub was experimental with food, also determined to keep dinners affordable and designed to promote interaction between intellectuals and artists. When I set up The Underground Restaurant in January 2009, I intended it to be a salon for ideas, and a place where the food promotes discussion. In the past we’ve had one dinner called The Conversationalist where possible topics of conversation were written on the place mats; my theme dinners such as the Elvis, Patrick O’Brian, Harry Notter, Edible Flower menus, and Umami night with a ‘mother’s milk’ course, surely provoked comment between diners. The Midnight feast with an all black menu, starting at midnight with guests in pyjamas and hair rollers, some carrying teddy bears, was another noteworthy occasion.
We’ve got some interesting dates coming up with the Comedy club in my living room as a particularly exciting innovation! How will stand-up comedy fare in the intimacy of the home?
14th July/ Bastille Day: I will be doing a classic French menu fixe finishing with a ‘piece montée’, a croquembouche, which traditionally finished off feasts in pre-revolutionary France. So this dinner, accompanied by an accordeonist, will bear traces of the ancienne regime as well as the institution that emerged from the revolution: the restaurant itself, which derives from the bouillon, the ‘restaurant’, a restorative soup. This date has even been noted by ‘Serge the concierge’.
15th of August: Ferragosto: also known as The feast of the Assumption. This lunch will be celebrating the virgin. I will be sourcing and researching ingredients and dishes connected to her; in fact almost anything with the word ‘mary’ in it has associations with the Virgin Mary…rosemary, marigold… and I’ve ordered a mould of her image, just in case she doesn’t spontaneously make an appearance, say, on a grilled cheese sandwich….
21st of August: no theme just yet…but dinner with seasonal ingredients…I’m thinking Italy and fresh pasta…
8th of September: Josie Long the comedienne will be hosting a stand-up dining night…you will be sitting down however… This is the first of a series of comedy supperclubs, laughs in the living room…where both established and emerging comic talents will be performing between courses. The food will be a joke obviously.
19th of September: the second UK Underground Farmers Market. The first was a tremendous success with 40 stalls and 200 people, cooking demos, a bonfire, a cocktail bar on an ironing board, a bar in a bathtub, the homemade goods of several supperclubs, crafts too. This time we start earlier, at midday, so people can buy foods for lunch. There will be live music and more cooking demos…

The weekend after I’m going to Paris, to visit French supperclubs such as the Hidden Kitchen and Jim Haynes.
2nd October: A late harvest festival, offerings from my Aga. I’m thinking Oktoberfest, pretzels and beer?
9th October: Dinner.
16th October: Dinner, but it’s getting to the mushroom season so will go out foraging.
13th November: a revolutionary dinner… inspired by Russia…anyone know where I can get cheap caviar?
More dates will be up soon…teas, brunches and lunches….

    Listened to the podcast on Monday, my husband has decided I am officially a stalker, (I call it reasearch)……think he is just pissy about the apron he has to wear for the supperclub. Am inspired to make my next event a glam thirties evening,(with me in long vintage frock hiding my sneakers…) if only Ms Christie were attending…. The upcoming events look great, love the variety, although dont know how you do it every week….

Pistachio cream filled mini eggs. I made my own Ea Pistachio cream filled mini eggs. I made my own Easter eggs this year. You need moulds-a lint free cloth to polish them- some good quality chocolate like @guittardchocolate - a pastry brush. Melt the chocolate drops over a bainmarie or 30 seconds in the microwave. Brush the chocolate into the moulds trying not to go over the edge and put the mould in the fridge. Once hardened and chilled, use a teaspoon to drop in the pistachio cream. Return to fridge. Warm up a baking tray in the oven. Then take the mini eggs put of the fridge and pop them out of the moulds. You can combine it with cucumber, tomato, halloumi, feta, herbs, peaches, and obviously tuna. Potato and rosemary pizza with tomato & parsley sa Potato and rosemary pizza with tomato & parsley salad. Potato pizza sounds strange, after all you are double carbing. But it works. Thin soft slices of potato ( cut on a mandolin, soaked in water, then carefully dried on a tea towel) layered over day old pizza dough. ( leaving your dough a day or several just makes it deeper flavoured). A few sprigs of flowering rosemary from the garden too. I used @pomoragoodfood flavoured olive oils: the rosemary on the pizza, and garlic flavour in the salad. Sometimes for dinner or lunch all I do is shove a Sometimes for dinner or lunch all I do is shove a load of vegetables on a roasting tin, toss them in olive oil, salt, pepper, fresh herbs (woody ones like rosemary) and roast. I cut the potatoes up fairly small so they all take the same amount of time. I cook on an aga which is a weighty cast iron oven where you are supposed to cook 80% of your good in the oven, and 20% on top, so this is an easy option- no preheating necessary because an aga is on all the time. Here I have aubergine, carrots, butternut squash & potatoes 🥔 . Moqueca stew with butternut squash & jackfruit. Ma Moqueca stew with butternut squash & jackfruit. Many Brazilian dishes are African influenced & this is no exception, deriving from an Angolan stew. Usually it is with seafood, but this is a vegan version. I used palm oil which is also very Brazilian/Angolan. It’s red because of the high levels of beta-carotene. There are environmental issues around the use of palm oil- rainforest is cut down to access it. Like coconut oil it is solid when cool and liquid when heated. I spent a few months in the sertao region of Brazil & read the magical realism fiction of Jorge Amado . One of his novels: Dona Flor and her two husbands, contains recipes. Stuffed savoury persimmons. You can pretty much st Stuffed savoury persimmons. You can pretty much stuff anything: peppers, courgettes, aubergines, squash, potatoes skins, bananas, tomatoes. With enamel spoon and bowl. Cut the little hats off, set aside. Then stuff the veg with cooked rice, or freekeh or couscous or bulghur wheat, mix with finely chopped preserved lemon, some nuts or seeds, a fresh herb of your choice. It was the second half of a @hellofreshuk meal kit and I bumped it up with fridge foraging. You see that b & w round fabric pouch? This is a tortilla warmer. One of my best buys ever. It keeps them soft & warm, using the trapped heat to steam the tortillas. I did a @learningwithexperts baking course taught by @richardbertinet I now have baskets of focaccia, olive & sundried tomato breadsticks, sesame plaits, poppy seed stars, pizza bases, walnut & sour cherry loaves. My bubble brought some fresh clams over today & I My bubble brought some fresh clams over today & I made spaghetti vongole. Rinse the clams under running cold water, any that are broken or do not close, discard. Chop up shallots or onion, a whole bulb of garlic. Then soften the onion then the garlic in a deep frying pan. Boil the water for the linguine & add a handful of sea salt. Then add a glass of white wine to the onion/garlic, the clams, lots of freshly ground pepper & flat leaf parsley.
