Kumquat hobo-style Alaskan salmon
Ingredients

Alaskan sockeye salmon filet
2
kumquats, finely sliced
1/2
fennel bulb, finely sliced
few springs of wild fennel flowers (optional)
drizzle of olive oil
salt
1
tbsp
Pink peppercorns
Instructions
Preheat the oven to 180C
Wash and pat dry your filet of fish, place it on the slightly oiled foil or parchment.
Wrap the salmon, with the ingredients.
Put on a baking tray and bake for 10 minutes.
Serve with rice or new potatoes.
