High protein cottage cheese Burnt Basque style cheesecake

9 inch springform cake tin
non stick parchment paper circle, big enough to go up the sides of the tin
Ingredients
600gcottage cheese
200gcaster sugar
4eggs
1/2tspsea salt
1tspvanilla paste
180mlgreek yoghurt
30gplain flour
Instructions
Preheat the oven to 225C
Prepare the baking tin by lining it with parchment paper
Beat together the cottage cheese and sugar by hand or machine.
Add the eggs one by one, beating in between.
Add the salt, vanilla and yoghurt.
Finally add the flour then pour into the prepared tin.
Bake for 75 minutes, checking after 50 minutes. The top should be a dark brown like the skin on a rice pudding . When you remove the cheesecake, it'll still wobble.
Let it cool then place into the fridge for four hours.
