High protein cottage cheese cake recipe

I’ve been wanting to make a cheesecake for a while, mainly to convince my granddaughter that such a thing exists. I’ve also been wanting a go at a Basque style burnt cheesecake while at the same time making it high protein and low fat. This is what I’ve come up with.

High protein cottage cheese Burnt Basque style cheesecake

Course Afternoon Tea, Snack

Serves 8

Ingredients

  • 600 g cottage cheese
  • 200 g caster sugar
  • 4 eggs
  • 1/2 tsp sea salt
  • 1 tsp vanilla paste
  • 180 ml greek yoghurt
  • 30 g plain flour

Instructions

  • Preheat the oven to 225C
  • Prepare the baking tin by lining it with parchment paper
  • Beat together the cottage cheese and sugar by hand or machine.
  • Add the eggs one by one, beating in between.
  • Add the salt, vanilla and yoghurt.
  • Finally add the flour then pour into the prepared tin.
  • Bake for 75 minutes, checking after 50 minutes. The top should be a dark brown like the skin on a rice pudding . When you remove the cheesecake, it'll still wobble.
  • Let it cool then place into the fridge for four hours.

    I just discovered Basque style cheesecakes and need to have my hand at one! I love the idea of your lower fat/higher protein recipe. Yours looks absolutely delicious! May I ask what size pan did you used?

      Hi Jennifer, I think it was 22cms to get that depth
