Oatmeal cookies

Ingredients

  • 100 g rolled oats (quick cook)
  • 100 g wholewheat flour
  • 1.5 tsps baking powder
  • 1.5 tsps cinnamon, ground
  • 35 g salted butter, melted
  • 1 tsp vanilla paste
  • 120 ml maple syrup
  • 60 g raisins
  • 30 g pine nuts
  • slug whisky or brandy because I can't help myself

Instructions

  • Mix all the dry ingredients together in a bowl
  • Mix all the wet ingredients together in a bowl
  • Combine and chill in the fridge for minimum half an hour or even overnight. Preheat the oven to 170c
  • Make golf ball sized balls from the mixture and spread them on a cookie tray covered with a silpat or parchment paper.
  • Bake for 10 minutes. Best to slightly underbake to retain softness.
  • Leave to cool on a rack then serve.
