Kumquat hobo-style Alaskan salmon


  • 1 Alaskan sockeye salmon filet
  • 2 kumquats, finely sliced
  • 1/2 fennel bulb, finely sliced
  • few springs of wild fennel flowers (optional)
  • drizzle of olive oil
  • salt
  • 1 tbsp Pink peppercorns


  • Preheat the oven to 180C
  • Wash and pat dry your filet of fish, place it on the slightly oiled foil or parchment.
  • Wrap the salmon, with the ingredients.
  • Put on a baking tray and bake for 10 minutes.
  • Serve with rice or new potatoes.
