Preheat your oven for 20 minutes to 180C. Grease a small oven tray with olive oil.
Score the tofu diagonally on the top so the marinating liquid can penetrate
The marinated tofu comes already marinated in soy sauce. You can add a little more soy sauce to this. If you have plain tofu, add extra soy sauce and leave it to marinate for an hour or so before cooking.
Add the maple syrup, ginger, chilli, salt and pepper. Feel free to add your own spices and flavourings such as chopped spring onions, garlic, sesame seeds.
Put in the oven for 20 to 30 minutes to roast. The maple syrup goes all caramelly which is delicious.
You can eat this as is - hot or add the block to noodles or rice or vegetables.
