Melty cheese dishes for winter

Here are a set of recipes, made with French cheese, that make winter such a cosy season on a culinary level. Christmas jumpers and mulled wine are optional. White wine is the best pairing with these cheese dishes, cutting through the richness and oil. Fondue is of course the classic melty cheese dish- here are links to a couple of recipe here and here with Comté cheese (I even love fondue in the summer).

Aligot

In the Auvergne area of France, particularly in the towns of Aubrac and Aurillac, you see Aligot sellers stirring giant copper pots, repeatedly drawing up stretchy lengths of potato and cheese with a wooden spoon.  Rather romantically it’s known in France as the ‘ribbon of friendship’.

Aligot

Tomme Fraiche can be hard to get hold of in London, but a combination of one third mozzarella and two thirds Comté will work well.

Ingredients

  • 1 kilo floury potatoes, unpeeled, skin slit around the circumference
  • 2 tbsp sea salt for the boiling water
  • 100 g butter
  • 300 ml full fat creme fraiche
  • 1 garlic clove
  • 300 g Tomme fraiche, grated
  • Salt and pepper to taste

Instructions

  • Boil the potatoes with their skins on, making sure you have salted the water adequately . When cooked, cool down slightly with cold water then peel off the skins. This is much easier with a slit around the circumference.
  • Pass the peeled potatoes through a ricer, this is also a good method for making mashed potato - it means the potatoes don't become too gluey. Then combine the 'riced' potato with the butter, in a medium saucepan on a low heat
  • In a separate saucepan, heat the cream and the clove of garlic on a low to medium heat.
  • Add the cream gradually to the riced potatoes, stirring all the while. Then add the grated Tomme to the potatoes. Keep stirring until the mix is stretchy and unctuous. Serve hot.

 

Tartiflette

This is usually made with bacon, but I do a vegetarian version. The cheese for this dish is Reblochon, sold in a semi or whole round with an orange-washed rind.

Vegetarian Tartiflette

Traditionally this dish is made with a round of Reblochon, a washed rind cheese from the Haute-Savoie region in the Alps. You can use other cheeses. I'm getting into the habit of whacking a whole Camembert into the oven and dipping into it with bread or potatoes in front of the telly.
Usually this dish is made with lardons or bacon, but I've made it vegetarian by adding mushrooms.
I've noticed that English recipes for Tartiflette add cream or creme fraiche. In France they tend not to, as it's rich enough.

Serves 6

Ingredients

  • 1.2 kilos smallish potatoes (Charlottes are good), boil with skins on, slit around the middle
  • 50 g butter
  • 3 or 4 shallots, finely sliced
  • 2 fresh bay leaves
  • 2 cloves garlic, minced
  • Glass large white wine or dry sherry
  • 200 g button mushrooms, cut in half
  • 1 whole reblochon cheese
  • salt and pepper to taste

Instructions

  • Boil the potatoes in their skins, then drain and cool down slightly with cold water, remove skins and cut into 1 cm round slices.
  • In an oven-proof dish, fry the shallots and garlic and bay leaves in the butter on a low heat until soft.
  • Add the potato slices to the oven-proof dish, stir gently so as not to break them up and add the mushrooms then the white wine.
  • Then place the entire Reblochon in the middle of the dish and transfer to the oven. Bake for 20 minutes until melted. Season to taste. Eat with a green salad and white wine.

 

Raclette

Raclette is the name of a cheese, but the root of the word is ‘racler’ to scrape.

My parents often tell me about their honeymoon experience of Raclette: alighting in some wooden chalet in the snowy Alps, a red-faced sweating man was sat by the fire with a wheel of Raclette. He had a routine: lean in, melt the cheese and scrap it into a plate then take a swig of white wine.

This is the authentic and romantic way to do it but nowadays you can buy it in slices. There are specific Raclette machines to melt the cheese, but I’ve also found it works just as well using a tea light under a small frying pan, a grilled sandwich maker or even running back and forth to the microwave where a 30 second blast will give you a delicious gooey puddle.

Eat with pickles, potatoes and a green salad.

Raclette

Count around 200g of Raclette cheese per person.

Ingredients

  • 800 g Raclette cheese

To accompany the Raclette:

  • 1 kg small potatoes, unpeeled, washed and dried
  • 200 g coarse salt

Extra ingredients:

  • Jar silverskin onions
  • Jar cocktail gherkins

Instructions

For the potatoes:

  • Preheat the oven while you prepare the bowls of pickles and a simple green salad. I bake the potatoes on a bed of coarse salt in the oven. This makes them extra fluffy inside and crispy on the outside. Bake at 200c for approximately 45 minutes.

For the Raclette:

  • Raclette can be bought in slices or as a quarter or half of a wheel, whatever is available. You don't need to do anything to the cheese, other than melt it gradually, scraping pools of gooey cheese onto plates. You can eat the skin.

Perfect food for zero degrees 🧤🧦🧣❄️recipe: half a dozen brown onions sliced thinly softened in olive oil. 5 cloves garlic crushed and added once the onions are soft. Several fresh bay leaves. 3 vag nope I meant veg stock cubes and 1.5 litres of hot water. 1/3 bottle white wine or a glass of dry sherry. Or both. Simmer for a while then add sourdough bread topped with grated cheese at the end. I used cheddar. Serve hot, sprinkle parsley if you have it and good black pepper. I went to a pre Christmas event at @themontgomerie I went to a pre Christmas event at @themontgomeriegarden hotel in Bloomsbury last night. It was hosted by the German tourist board promoting Saxony. I saw mini workshops of crafts from Nuremberg- these little 25 point Moravian paper stars ( each one takes an hour to make), finely whittled & carved wooden Christmas decorations , @meissen_germany porcelain, smoking wooden figurines ( filled with incense, nutcrackers, authentic stollen, Nuremberg ginger bread, white mulled wine and some lovely canapés. Going to try to make a stollen myself. You must always cut it in the middle, so you can put it together so it doesn’t get stale. I found out Colditz, the famous TV drama is in Saxons. On the secret platform of the jubilee line at Char On the secret platform of the jubilee line at Charing Cross, now disused, we were treated to a fabulous cheese inspired fashion show by the fashion students of @ualfoundation and @3ddafoundation The cheeses featured were cantal, comté, tomme de savoie, saint nectaire, fourme d’ambert, époisses, Brills-savaging, Camembert, Brie and langres. The outfits were so creative and deeply researched by the designers. @thecheeseexplorer explained that during the tastings, some designers had never tasted those cheeses before. Anglo French @tatty_macleod came and is one of the judges. It was surreal and fun. Afterwards we were treated to a groaning cheese platter table at the bottom of the escalators. Then I joined the commuters of the london tube journeying home. Food and fashion are often opposed: to be fashionable you must not eat. Next door there are 2 damson trees in the grounds Next door there are 2 damson trees in the grounds of the council flats. The ground smelled like jam. I picked a few kilos, 3 kilos after sorting through. I put them, crushed, stones included, in a clean glass container, with 1.5 kilos of sugar and 2 litres of gin ( I may add another), I’ll leave them for 3/4 weeks then filter. Damson gin for Christmas.

I’ve got Covid (day3) so not much food in the hous I’ve got Covid (day3) so not much food in the house. I found some floppy- going black- carrots in the salad drawer, so I peeled and resuscitated those. Chopped them into a saucepan with a couple of cubes of vegetable stock and a litre of hot water. Then I added a couple of tablespoons of smooth peanut butter, a clove of garlic, 1 tsp of ground cumin, half a preserved lemon. Just stuff I had around. Simmered till the carrots were soft then blended in the @vitamixuk I can honestly say the vitamix is my most regularly used bit of kitchen kit. Anyway- hey presto- a high protein soup with fibre. I hope I test negative before I totally run out of food. #solo #covid #highprotein #soup
I wrote this long read for @scotnational about the I wrote this long read for @scotnational about the anti G8 camp in Stirling to protest against the G8 in Gleneagles. I partipated in the camp & protest along with my daughter @siennamarla playing in the samba band, part of the Pink Bloc. The camp was an incredible experience- the possibility of a different type of politics, of horizontal democracy. It was also a lot of fun. But our protest was tragically overshadowed by the 7/7 bombings in London. We wanted to create a new world but by the actions of a few disaffected British Muslim terrorists our positive movement for change was drowned out by hideous violence against normal ordinary people. Cheap stuff. Since the pandemic money has been tig Cheap stuff. Since the pandemic money has been tight. I shop at Lidl and aldi for food, Vinted, Portobello and Primark for clothes. The first pic is gazpacho with a banderilla from Lidl. They often have Spanish weeks and other nationality foods at a bargain price. I love those huge cartons of gazpacho- I glug it down like juice, especially in the heat. The banderillas are sold by the jar. Second pic is me in a primark vest, cardi, with an Anthropologie sale belt and old denim shorts from 10 years ago.
