Using the persimon fruit leather, I created pinwheel canapes.
- 2 rolls fruit leather, cut into 2 inch strips
- 200 g soft goats cheese, whipped
- 1 bergamot or lemon zest
- large pinch dried mint
- Make your fruit leather, according to this recipe. Cut into 2 inch (5cm)wide strips.
- Whip together the goat's cheese, bergamot zest and dried mint
- 'Butter' with the goat's cheese, one side of the fruit leather strip
- Roll up.
