Air Fryer Arancini from leftover risotto

 I turned my mum’s christmas risotto (smoked salmon and whisky)  into air fryer arancini. This worked quite well (but let’s be honest, it’s never as good as if it were deep fried).

My sister styled this Christmassy!

Air fryer arancini recipe:

Course Hors d'oeuvre, Snacks

Serves 4

Ingredients

  • Leftover risotto
  • 150 g Cheese, mozzarella, or a soft blue cheese, cut into small cubes
  • 3 eggs
  • 200 g flour
  • 200 g breadcrumbs
  • Salt and Pepper

Instructions

  • Roll the risotto into balls, making a hole in the middle with your thumb.
  • Press in a cube of cheese then roll the ball again.
  • Make a production line: prepare a bowl of flour, a bowl of whisked egg, a bowl of breadcrumbs.
  • Season the eggs and flour with salt and pepper.
  • Dip the ball into the flour, then the egg, then the breadcrumbs.
  • Set aside until you have a dozen (depending on the size of your air fryer).
  • You can carry on making them while the first batch are cooking.
  • Set the air fryer to 190c and 15 minutes.
  • Cook
  • Remove and serve hot.
