Summer at last: panzanella, bread salad, recipes

Tentatively we may just be entering some kind of summer, we can finally put away our umbrellas and turn off the heating. Bindweed and brambles are covering the garden, having rejoiced in the relentless seesaw of rain and sun. A few of my home-grown tomatoes have begun to ripen but many of them have blight- a kind of fungus, think of it as a plant-based thrush or candida.

I recently attended a cooking class at Eataly in Liverpool Street. This is a vast emporium celebrating Italy’s food and wine, with products that are difficult to find elsewhere, as well as a selection of restaurants, cafés, dessert counters and coffee bars (nobody makes coffee like the Italians. The French are surprisingly bad at coffee, overpriced and bitter). A visit here will have to do for my foreign holidays this year.

We learnt to make a different kind of focaccia, the authentic one, according to people from Genoa. This is another recipe for the Ligurian focaccia which has a brine mixture of water, salt and olive oil poured over the top just before baking. It has the characteristic holes (now improved), made with the pads of your first three fingers, and is thin, crunchy and salty. Like baguette it’s best eaten on the same day, after that it becomes very chewy, but I have a solution for your day-old focaccia, should there be any left!

'Ligurian focaccia'

Some say Ligurian focaccia, which spans from La Spezia to San Remo including Genoa, is the original focaccia. It's another destination on my travel bucket list post Covid. It's best to make this in the evening, and let it rise slowly overnight.

Cuisine Italian, Liguria

Serves 10

Ingredients

  • 400 ml tepid water
  • 1 tsp active dry yeast
  • 10 g honey or sugar
  • 400 g bread flour (I used 00 flour)
  • 25 ml olive oil
  • 3 tbsp maldon's sea salt

For the brine

  • 50 ml water
  • 1 tsp sea salt
  • 25 ml olive oil

Instructions

  • In a bowl or jug (I use a Pyrex jug) mix the water, yeast and sugar/honey. Leave to froth.
  • In another bowl or food mixer, add the flour, salt and olive oil.
  • Mix the two together for five minutes.
  • Cover the bowl and leave overnight to rise.
  • The next morning, grease a baking tray with olive oil and pour the risen dough into it. Gently pull out the corners of the dough to spread it to the edges of the tray. Go back a couple of times and continue to pull. Eventually it will settle into the shape of the tray.
  • Preheat the oven to 235Cº
  • Using the finger pads of your first three fingers, make deep dips or holes all over the surface of the foccaccia.
  • Make the brine by mixing the water and salt together until the salt is dissolved. Stir in the olive oil and mix well. Pour all over the surface of the focaccia and it will sink into the holes.
  • Bake for 15 minutes until the top is golden. Remove from the oven. Turn out onto a cooling grid to retain the crunchiness. Brush bottom and top with more olive oil and scatter Maldon's salt on top.
  • Serve immediately. It's good for that day. The following days it becomes even chewier so I use it for a panzanella salad.

Classic Panzanella

At a thrifty cook who keeps an efficient pantry, I love recipes that use up stale ingredients. This is a great summer salad, rather like a pre blended gazpacho. Buy the best tomatoes you can. This salad can be made the night before.

Serves 4

Ingredients

  • 1 red onion, finely sliced in half moons, soaked in oil or water then drained if you want them to have less sting
  • 500 g ripe tomatoes, chopped ( I keep the seeds. I like the seeds)
  • 1/2 clove garlic, grated or minced
  • 1 tbsp heaped, of capers, chopped
  • pinch caster sugar
  • 3 tbsp red wine vinegar or sherry vinegar
  • 75 ml olive oil
  • 1 tbsp sea salt
  • 300 g large section of focaccia or other italian bread, torn into chunks
  • bunch fresh basil leaves

Instructions

  • Prep the onions, tomatoes, garlic, capers, and place into a bowl.
  • Add the vinegar, oil, sugar, salt and pepper.
  • Add the bread, mixing thoroughly, so that the bread soaks up the juices.
  • Just before serving, add the basil leaves.

Yellow tomato panzanella

This time I used yellow tomatoes, black olives and prunes. It's a very flexible salad.
Course Salads, Starters, Vegetarian sides
Cuisine Italian

Ingredients

  • 500 g yellow tomatoes, roughly chopped
  • handful prunes, stones removed, torn
  • handful kalamata olives, stones removed
  • 1 lemon, zest of
  • 75 ml olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp sea salt
  • pepper to taste
  • 300 g day old italian bread or focaccia torn into chunks
  • small chunk parmesan or pecorino cheese, grated
  • bunch fresh basil leaves

Instructions

  • Assemble the tomatoes, prunes, olives, lemon zest in a bowl
  • Add the oil, vinegar, salt and pepper
  • Stir in the bread chunks and the parmesan cheese
  • Leave overnight or for a few hours covered at room temperature
  • Add the basil leaves and serve

These are the stories I love to do: I go off on an adventure, take my time, interview people (especially women), photograph them in their environment and create recipes on site. I had the awning installed, the encaustic Minton tiles removed and put back with green grout. The terrace was causing damp so this had to be done. My calamondin plant is looking lovely. The benches which I repaired with hard wood & I repainted using a mix of 2 colours. The marble table I bought in Suffolk at a car boot. Everything is still dusty & I’m waiting for the window cleaner to arrive.

I drove my campervan @camperdays.international from london to the Hebrides- using my gas stove to cook foraged and local ingredients. A real food safari. With the sea spaghetti I made a sea spag vongole with giant parlourdes picked up from the sand at the same time. Great fun, beautiful weather and, the day of the full moon, a wonderfully low tide. This was on south Uist.

I found out the worlds best maker is Japanese, in fact I was most impressed by the Japanese marmalades in general. Everyone wore orange. I must have tasted 50 marmalades. I met Paddington’s sister, karen jankel who is michael bond’s daughter, born in the same year as Paddington. She gave a charming talk on Paddington, mentioning how the queen insisted on having real marmalade sandwiches in her @launerlondonofficial handbag during the shoot. The house itself is Tudor and Georgian. I stayed in my campervan from @camperdays.international in the car park, cosy in the rain. And how restaurants & plane meals are now vegan rather than vegetarian. But, there are still more the double amount of vegetarians as vegans in the UK. I’ve written a vegan cookbook V is for vegan (link in bio) and am a big fan of vegan foods. I’ve not eaten meat for over 40 years. This is a sustainable diet, in terms of longevity. She showed me how to make injera, the Ethiopian flatbread which is fermented. She also talked about the coffee ceremony, 3 cups, which they pair with toasted barley or, currently, popcorn! I’d love to visit Ethiopia and find out more about their ancient food culture, history, 3.5k year old monarchy and religions.

Wouldn’t it be great if they had a kitchen set up permanently. Libraries are community centres and could be used to teach how to cook from scratch.

Last week I did a wild foraging walk with @luciath Last week I did a wild foraging walk with @luciathewildkitchen in Kent @kent_downs_aonb just outside Canterbury. I’m going to help out during her May wild asparagus workshop. This chef lived in France, is a brilliant forager and cook. Her campfire meal of lentils, wild garlic raitha and a dukkah of alexanders, Parmesan was genuinely delicious not worthy like so much foraged food.
