How to make Easter eggs

It’s been a long hard winter. I broke my ankle three days after my birthday in January which made an isolated and difficult lockdown that bit harder. I had to wear an airboot day and night, even in bed. After eight weeks it came off but I’d forgotten how to walk, which sounds mad doesn’t it?

Two weeks later, I can walk up and down stairs again, but I had to think, to retrain my mind, to purposely say to myself even out loud ‘heel then toe’ as I had got into the habit of limping and compensating.

During this period I had my first jab, the Oxford Astrazeneca one. I felt rather ill for a week afterwards, aches, pains, headaches. It felt like the worst most prolonged hangover. My arm grew red and swollen which lasted for three weeks. I’m not sure if I felt so bad because I’d already had Covid without knowing it, or because my immune system is working incredibly well. Hopefully I will have my second vaccine in a couple of weeks.

This last week, just before Easter, lockdown is starting to ease. On Monday I went for my first walk in months through Regents Park. The sun was out. People were having outdoor picnics everywhere. We are allowed to meet in groups of six, but some groups were larger. Italy and France have gone back into lockdown while we in the UK are easing up. From April 12th we can go to pubs and restaurants outdoors.

But my daughter and her boyfriend have moved upstairs, their first home, and I’ve been making them lunch every day, often salads, while the builders make it habitable. Actually it’s beautiful and they’ve used a mix of bargains from Facebook Marketplace and new purchases. I liked making them lunch every day, I felt useful again. I really need more work. Living on my own with very little work is increasingly difficult for my mental health, never mind everything else. As a self-employed person I’ve had little support from the government.

Here is a cheery Easter recipe. Spring is here. The daffodils I naturalised in my lawn last November have all sprung up, swaying like tiny yellow windmills. It can only get better.

Buy mini-easter egg moulds. Once bought, you can use them year after year. I used Guittard chocolate chips, which come in a gorgeous array of different flavours.  Pistachio cream can be bought here.

Mini filled Easter eggs

Make the shells first then fill them with different flavours of chocolate. I used Guittard chocolate drops which are of high quality. This quantity below will fill 4 sets of plastic mini egg moulds

Ingredients

  • 300 g good quality chocolate dark

For the fillings:

  • 300 g good quality chocolate for filling: milk, white, or flavoured
  • 50 g coconut oil
  • 3 tbsp pistachio cream
  • 3 tbsp salted caramel

Instructions

  • First polish your moulds with a lint-free cloth. This helps give a shine to the chocolate.
  • Melt a small quantity of the chocolate you will be using for the shells in a microwave, 30 seconds only.
  • Brush the shell chocolate into the moulds. Try not to go over the edges (wipe these) so you get a crisp line. Put in the fridge for 5 minutes or so.
  • Melt the chocolate you will be using for the filling in a microwave. Or use pistachio cream, salted caramel or add chopped nuts. If you wish, you end up with lots of little bowls of different flavours.
  • Add a teaspoon of coconut oil to each bowl of the chocolate filling (but not the pistachio cream or salted caramel)
  • Remove the moulds from the fridge and using a teaspoon fill the mini egg moulds with the flavours. Fill to the top but no further. Put in the fridge. Let chill for half an hour.
  • Remove from the fridge and pop the egg halves out from the moulds.
  • Using a heated baking tray turned upside down, carefully press the bottom of each half of the chocolate eggs then stick the two halves together.

    Hello Kerstin
    I love your blog and always read it first when new stuff pops into my inbox! I like that you’re accomplished in the kitchen but also have interesting things to say on travel, gardens, other peoples’ recipes etc. The photographs this time are fabulous! Roll on some sunshine and a bit of normality.

I visited @tokyobagellondon with my granddaughter I visited @tokyobagellondon with my granddaughter yesterday to try one of their viral wobbly bunnies. We also tried the multi layer Oreo pancake cakes, the onigiri shaped croissant. My sister had the black sesame latte and I had yuzu tea. I spent £35 in a short space of time as each dessert was £5 but it was a fun experience. Ophelia said ‘lovely flowers’ which shows a degree of sophistication for a 2 year old. A quick high protein lunch of ratatouille with smo A quick high protein lunch of ratatouille with smoked tofu.  @pomoragoodfood olive oil then an aubergine cut into thick slices then quartered. Fry till translucent then add the chunks of red pepper. 2 fat garlic cloves sliced thinly, a block of smoked tofu in chunks, 2 bay leaves, a small handful of maldon salt. A courgette cut into thick half lengthways- then sliced into half moons. I might chuck in a handful of pantelleria capers in vinegar to give some acidity. Made pesto in the vitamix: fresh basil leaves, 4 cloves garlic, 100g pecorino, 100g pine nuts, 150ml olive oil, salt, and juice of half a lemon. Whizz up.  Then cook the pasta - traditional shape is trofie but I only had fusilli. Top with small boiled potatoes and steamed green beans. Douse again with olive oil and more pine nuts. I served this with green salad with cucumber, avocado, pumpkin seeds and a mustard lemon olive oil dressing. #familylunch #sundaylunch #pestopasta #pestgenovese

Roast with olive oil, salt, smoked paprika in the oven for 30 minutes. Soften 2 brown onions in a deep pan with olive oil, add 3 cloves garlic minced, 3 bay leaves. Then add the veg stock powder and 1.5 litres hot water to the pan. Stir. Pour in the roast butternut squash. Cook for 10 minutes. Then remove the bay leaves and blend. Add 3 large scoops of natural yoghurt or skyr. Season to taste. Transfer back to the deep pan and serve with grated cheese, pumpkin seeds, chilli. 🌶️ #vitamix #soup #winterfood #agacooking

First I parboiled the cauliflower then roasted it for 30 to 30 minutes with salt and olive oil in the oven. Add the ground almonds and bake for another 10 minutes. Unstyled food photos: carrot and preserved lemon s Unstyled food photos: carrot and preserved lemon soup. I’m eating a lot of soup as it’s easy to make with one hand and a vitamix. I roasted the carrots ( 1 kilo) in olive oil. Then boiled them with 2 tbsp veg stock, 1 tsp ground coriander, 1 tsp ground cumin and 2 litres hot water. For a thicker soup, add 1 tbsp of cornflour mixed with the stock juice and add. Once tender, I blended this with 2 whole preserved lemons, adding a little of the juice from the jar. Blend on medium then high. Serve with yoghurt. It’s a way of effortlessly eating a lot of vegetables in one meal. #winterfood #soup #vegetables
