I used the egg noodles that came in my government food box for those that are shielding. Not bad. Really want to make ramen from scratch. I struggle slightly with polenta. Last night I spent 45 minutes stirring it over a induction job (grrr). It’s basically corn porridge. The equivalent to grits. You need a fuck load of butter and cheese to make it taste of something other than texture and corn. I always prefer it the next day, when it forms a solid cake and cut be sliced and grilled and paired with a lime salsa just to liven it up. This dish is inspired by @irina.r.georgescu‘s Romanian cookbook Carpathia. I stuffed the courgettes with smoked quinoa from @hodmedods, preserved lemon, spring onions, mushrooms fried in butter. Then made a tomato stock, baked the courgettes in the stock and added Greek yoghurt and mint. First time leaving london since lockdown. I’m in the Cotswolds in an Airbnb with my daughter @siennamarla and @jamescalmus it’s utterly beautiful. A sunset walk over the fields, thatched cottages, drystone walls, apples and hollyhocks, sun warmed brick and unanxious sheep. It’s so good for my eyes to drink in new sights. The air is sweet. The trees rustle, individual leaves waving hi. London trees don’t act like that. Homemade shortcrust pastry ( I’m often lazy about making pastry but honestly it’s so easy and quick and tastes so much better) with marinated artichoke hearts, and black pepper pecorino. Roast carrots with olive oil, honey, then I added feta, which melted fudgily with the heat of the dish, then sprinkled rocket, pine nuts and made a coriander pesto dressing. It was very nice with a Californian Chardonnay. Broccoli and blue cheese tart with homemade shortcrust pastry. I’m using Stilton from @cropwellbishopcreamery I thinly sliced the broccoli with a mandolin to make a pretty pattern on top. 2 eggs
300ml Greek yoghurt or creme fraiche
150g Stilton
Whisk together and pour into the pastry shell.
